What do you need?
4 chicken thighs
200g crushed tomato
2 garlic cloves
2 bay leaves
1/2 green pepper
1/2 red pepper
1/2 glass of white wine (optional)
1 liter of chicken broth
Salt and pepper
Chopped fresh parsley
How to cook it:
Step 1: Use a pressure cooker to make the preparation faster. This aspect is not limiting but will allow the chicken to cook in less time. Put oil in the pot so that you seal and brown the chicken thighs (previously seasoned). Then remove and reserve.
Step 2: Now put the garlic, the onion, the green pepper in strips, the carrot in medium cubes, add a pinch of salt and cook until the onion is translucent. It's time to add the crushed tomato (you can substitute it for tomato paste or processed tomatoes without much water). Cook over medium heat for 5 minutes.
Step 3: Place the chicken again, add the chicken broth (it must cover the prey), the bay leaves, salt and pepper. When the boil breaks, cover the pot and cook over high heat until the pot begins to sound, lower over medium heat and cook for 10-15 more minutes.
