This recipe is a gourmet haute cuisine delicacy, few know how to make it. Once you master it, you can not stop including it in your menus of the week. Furthermore, its high nutritional value and its health benefits are the perfect excuse to eat it once a month.
Ingredients: (2 servings)
- ½ kg. liver
- 1 onion
- Olive oil
- 1/2 cup broth
- Salt and pepper
- 1 jet of red or white wine (optional)
How to make it:
1- In a frying pan, pour a good amount of olive oil and place over low heat. Finely chop the onion in a feather cut and direct to sauté in the pan with salt until softened but preventing them from becoming transparent.
2- With the help of a spoon, bring the onion to the ends of the pan leaving a hole in the middle where we will place the liver to seal it on both sides until golden, over medium heat. Then we mix with the onion and cook it for a few more minutes.
3- Add pepper, salt and parsley. Pour a good stream of white or red wine, as you prefer, and using the wooden spoon stir until the alcohol has evaporated.
4- To finish, add the broth and cover with a lid. After this we reduce the heat again and leave it for 10 minutes or until all the liquid has evaporated almost completely. It is vital not to overcook the liver because if it is dry its consistency will not be pleasant.
