Eggplants are a very versatile food because they allow us to prepare them stewed, fried, parboiled and even au gratin. Here we will tell you how to make the most delicious au gratin eggplants.
- 2 eggplants
- 200 grams of parmesan cheese
- 3 basil leaves, finely chopped
- 1 pinch of oregano
- 1 pinch of parsley
- 1 pinch of salt and pepper
- 100 grams of peeled and crushed tomatoes
How to make it:
To start, we suggest you choose good eggplants for this dish, which are very fresh and in good condition.
Then wash the eggplants very well to remove any impurities
Cut the eggplants into slices (soak in vinegar water to maintain their color and texture for 5 minutes)
Then add salt and pepper to taste to the eggplant slices.
Turn on your pan, add a splash of oil and place the eggplants until they soften
Remove the slices from the heat, place them on a tray, and add cheese and sliced tomato (we recommend Parmesan cheese to give them more flavor and texture)
Take your eggplants to the oven for 15 minutes, and that´s it.
