Rice is a contour that cannot be missing in many kitchens, with it you can accompany any type of protein and it does not necessarily have to be always white.

What do you need?
- 2 cups of rice
- 1 onion
- 1 red pepper
- 1 carrot
- 1 can of corn kernels
- 1 ball of fresh mozzarella cheese
- 1 can of tuna
- One lemon's juice
- Salt to taste
Step by step:
Step 1: Cook the rice as usual. When ready, remove from the heat and let cool. Cut the carrot, onion and red pepper into small cubes. First fry the carrot so that it softens and then add the other vegetables, when the sofrito will be ready add the corn. Remove from heat and reserve.
Step 2: In the bowl add the rice, the sofrito, the cheese in small pieces, the minced tuna and the finely chopped parsley. Add salt, pepper, a splash of oil, lemon juice and mix.
Step 3: Refrigerate the rice for 30 minutes and you're done.
This recipe can be served with a grilled chicken milanese and steamed vegetables.
