Lentils are a recognized source of protein that allows you to obtain many nutrients without gaining much weight. Here we bring you this simple salad that will allow you to lose weight while eating without regrets.
Lentils are usually eaten in soup or cream, but this is a novel recipe that eliminates many of the ingredients that add weight and transforms it into a succulent salad that will satisfy you without gaining weight.
What do you need?
- 200 grams of lentils
- 50 g of green beans (pods)
- 1 carrot
- 1 onion
- 2 red tomatoes
- ½ red pepper
- 1 lemon
- 2 coriander sprigs
- Olive oil
- Salt and pepper
How to make it:
Step 1: Cook the lentils until just done, strain and reserve. Stirring the tips of the green beans and cooking until smooth.
Step 2: Cut all the ingredients into small pieces or cubes and mix with the lentils and beans. The carrot should be grated unless you want to cook it to add it in small cubes.
Step 3: Prepare a vinaigrette with lemon, olive oil, salt and pepper. Pour together with finely chopped coriander and you already have a delicious vegan dish.
You can keep this recipe in the fridge and be sure that it will stay fresh for three days and you can eat as much as you like. You can add avocado or cheese if you prefer and thus give another flavor to this preparation.
