Holidays can mean: parties with the kids, birthdays, family reunions. And what better for this kind of parties than to prepare some very easy sweets, with chocolate and strawberries and besides, who can resist chocolate? They are a safe bet.
The best part? This cake balls recipe is a recipe for using dried out cakes, so there is no excuse not to do it and besides, children can participate and have a great time during its preparation.
Ingredients for the chocolate and strawberry cake balls (25 units approximately)
Chocolate sponge cake
- 100g butter or margarine
- 100g brown sugar
- 70g flour
- 30g pure cocoa powder
- 1 teaspoon of baking powder
- 2 eggs
- ½ teaspoon vanilla flavoring
- 2 tablespoons of butter or margarine at room temperature
- 2 tablespoons of powdered sugar
- 1 teaspoon of strawberry paste or natural or frozen strawberry purée
For the topping
- 200g dark chocolate fondant
- Colored balls
Preheat the oven to 180ºC and grease a baking pan of about 10-15cm in diameter.
To make the cake, sift the dry ingredients (flour, cocoa and baking powder) and set aside. Mix the butter or margarine and sugar. Add the eggs one by one.
Incorporate in two additions the dry ingredients with smooth and enveloping movements until you have a homogeneous mixture. Bake at 180ºC for about 20 minutes or until a toothpick comes out clean.
Let the cake cool on a wire rack. For the strawberry cream, sift the powdered sugar and mix with the butter and strawberry and beat until a well incorporated texture, set aside.
Once cool, crumble the sponge cake and make crumbs, then add a couple of teaspoons of the strawberry cream and mix well with a spatula or with your hands until the crumbs get a slightly moist texture.
Form balls with your hands.
In a microwave-safe bowl, melt the chocolate in 30-second intervals at low power, checking at each interval until the chocolate is melted and mix well, allowing it to temper for 5 minutes.
With a skewer stick, prick the balls and dip them one by one in the chocolate, letting them drain on a rack to remove the excess and sprinkle with colored balls.
