Preheat the oven to 180 °C.

Spread the almonds along the surface of a baking sheet and bake for 15 minutes at 180 °C. Remember to stir occasionally. Remove from oven and let cool.

Melt the semi-bitter chocolate in a bain-marie, that is, over a small pot of hot water, place a heat-resistant bowl, and melt the semi-bitter chocolate in it. Move constantly until the chocolate is completely melted and remove from the heat.

Pour the baked almonds in a bowl with melted semi-bitter chocolate and integrate until completely covered, move constantly until the chocolate hardens, refrigerate for 15 minutes and add the remaining chocolate, move until forming little rocks.

Add the cocoa and the cinnamon to the bowl of almonds and stir until completely integrated. Serve in a glass jar and enjoy.

Keep them in a glass jar.

To give a different touch to your covered almonds, you can combine the cocoa with some spice powder such as clove, cardamom or aniseed.
