Exotic and easy-to-make Indian dessert: Jalebi, try it!

Jalebi is a traditional dish that forms an important part of many festivals and celebrations.

Indian cuisine invades the senses when tasting sweet recipes, with intense and exotic flavors that characterize them. Jalebi or Yalebi is a spiral-shaped fried sweet that is soaked in sugar syrup, its toasted flavor is intensified by its chickpea mass. Try it!

1. Make the dough by dissolving the yeast in 1 tablespoon of warm water and let it rest for 10 minutes.
2. In a medium bowl, mix the flours and add the yeast, melted ghee, saffron or food coloring and 2/3 cup water.
3. Stir until you obtain a uniform, thick, lump-free dough.
4. Cover the dough with a clean cloth and let it rest for at least 15 minutes.
5. Make the syrup by mixing the sugar with the water in a saucepan until it boils.
6. Cook over low heat for 15 minutes, stirring to avoid burning.
7. Remove from heat and add the saffron and let it rest.
8. In a frying pan, heat plenty of olive oil until it is very hot.
9. Put the dough into a thin-mouth dispenser, bag or piping bag.
10. Squeeze or pour the dough into the hot oil, drawing spirals.
11. Cook batches of Jalebi so they don't pile up in the pan.
12. Fry the Jalebi until crisp and golden.
13. Remove them and drain them on a plate with absorbent paper to lose any excess oil.
14. Soak the Jalebi in the syrup while hot for 1 minute.
