This dish will give you a big surprise because of its rich taste and how easy it is to prepare. The good thing is that if you don't want to fill them with tuna you can put salmon, boiled egg, cheese, ham, chicken...
The ingredients are very cheap, and it is very likely that you already have them in your kitchen.
- 2 cans of tuna in oil
- 3 medium potatoes
- 2 eggs
- 1 lemon
- 1 teaspoon of chopped garlic
- 1 teaspoon of chopped parsley
- Bread crumbs
- Frying oil
To make the mash, put the potatoes in a pan with water and salt, for about 30 minutes. When they are soft, remove them from the heat, leave them to warm up, peel them, put them in a bowl and prick them with a fork.
Now add the lemon juice, the egg, and mix. Add the well drained tuna, the garlic, the parsley, the salt and the pepper and stir again until everything is well mixed. Put the bowl in the fridge for 10 minutes.
Meanwhile, put the breadcrumbs in a dish and go on beating the egg in another dish. Take some dough and shape it into a croquette. Make several. Pass them through the breadcrumbs. Then by egg and finally by breadcrumbs again. This is called double batter. Put them on a tray until you have all the croquettes ready.
Fry them in a frying pan with abundant oil until they are well browned on all sides. Place them on a plate with absorbent paper to remove excess oil.
Present them with a nice salad. If you don't have much time, you can cook the potatoes in an express pot. You can also make the croquettes round, long or as you like. It is advisable to use two spoons because it is faster and more hygienic.
