Spectacular, that's how we would define this delicious brownie ice cream cake. A refreshing snack to enjoy on hot days.
Although at first glance it may seem a laborious and somewhat complicated cake, we assure you that it is not: it is quite simple to prepare.
The day before preparing the cake, make the brownie and set aside. If we choose to make homemade ice cream, we also do it the day before. Then, we only have to assemble the brownie ice cream cake and put it in the freezer overnight. If you prefer, you can make it the same day.
A little tip: when preparing the brownie, do not put the chocolate and margarine at the same time. Let the chocolate melt and, when it is almost melted, add the margarine and mix well with a spatula.
- 100g margarine
- 200g dark chocolate
- 5 eggs
- 80g sugar
- 1/2 teaspoon baking soda
- 80g flour
- 50g walnuts
- Vanilla ice cream
- Chocolate ice cream
Put a saucepan with water on the fire. When it starts to boil, put a glass bowl over the saucepan. Add the chopped chocolate and let it melt. When the chocolate is almost completely melted, add the margarine and mix well with a spatula until you get a smooth cream without chocolate lumps. Set aside.
With an electric whisk, beat the eggs with the sugar until they triple their volume. Add the baking soda and continue beating until completely incorporated. Pour the reserved chocolate cream over the eggs and with a spatula mix well with wrapping movements. Sift the flour and add it to the previous mixture with wrapping motions.
Finally, add the walnuts and mix a little more. Prepare the baking tray with baking paper and pour over it the dough we have just prepared. Spread well so that it is as smooth as possible.
Bake in a preheated oven at 180º for 30-35 minutes, heat up and down. The time is approximate, you have to be aware of the brownie because each oven is different. Once the time has elapsed, remove the brownie from the oven and let it cool.
Prepare a rectangular mold with baking paper to make it easier to unmold once the cake is ready. We have not used baking paper because the mold is made of silicone and it unmolds very well.
Once the brownie is cold, we cut it with the same measurements as our mold. The idea is to line the mold with the brownie. We cut the base and then the walls of the mold.
Add a generous layer of vanilla ice cream and with a spoon, spread it well so that it is very tight. Next, on top of the vanilla ice cream, place a layer of wafers.
On top of the wafers, add a layer of chocolate ice cream and on top of the chocolate ice cream, another layer of wafers. Finish with a layer of vanilla ice cream and cover the brownie ice cream cake with a piece of brownie.
Place in the freezer overnight. The next day unmold and cut into portions and enjoy!
