Peanut butter and chocolate unbaked cookies!

Preparation

Line a baking sheet with parchment and set it aside. Make and mix cookie base: In a medium saucepan over medium heat, combine sugar, butter, milk and cocoa powder. Cook until sugar and butter melt, stirring to combine. Bring mixture to a boil and then continue boiling for 1 minute. Pour the mixture into a large mixing bowl and add the peanut butter, vanilla and salt. Add oatmeal.

Using a medium size cookie spoon, scoop out and place cookie dough on the lined baking sheet. If you don't have a cookie spoon, use a measuring spoon and scoop out well-formed spoons of dough for each cookie. You can either leave the shape of the spoon or shape them by rolling them over gently and flattening them between your palms.

If you want to add the peanut butter squirt, melt the peanut butter and coconut oil in the microwave for 30 seconds. Stir to combine, then spoon out the cookies. Refrigerate for 20 minutes to firm up the cookies and add the dew. Transfer to an airtight container. Cookies will keep for about a week at room temperature or a month if refrigerated. If you added the peanut butter drizzle, keep it in the refrigerator to keep the drizzle firm.
