This recipe for salmon pesto skewers that we invite you to prepare today is a different and interesting way to enjoy this wonderful protein from the sea. A favorite of many, salmon is present in our kitchen on a regular basis for its versatility, nutritional values and, above all, for its deliciousness.
Pesto has its origins in Italian cuisine, although today we will make a more personalized version, as we will prepare it with a little spinach, parsley and walnuts. The idea is to propose slightly different flavors without losing the essence of the original recipe which, in these salmon pesto skewers, works wonderfully.
For 2 persons
- 200 g fresh spinach
- A bunch of fresh parsley
- 200 ml extra virgin olive oil
- 50 g peeled walnuts
- 300 g fresh salmon
- Salt to taste
- Ground black pepper
We start by preparing the pesto, and for this we will simply place in a blender or food processor the spinach leaves, parsley, walnuts, salt and ground black pepper. Set aside. Remove the skin from the salmon and cut into three or four centimeter cubes. Mix with the pesto and leave to marinate for about 15 minutes.
Finally, make the skewers by placing three to four salmon cubes per wooden stick and grill them over low heat in a hot pan with a little olive oil. When the salmon is almost crispy, remove from the pan and serve.
These pesto salmon skewers can be served with sautéed potatoes or white rice. The combination of two flavors as intense as salmon and pesto is well balanced, so it is best to choose a simple garnish. To drink I recommend a chilled dry white wine or a light beer.
