Breakfast is extremely important, so it is always good to look for ways to have something rich, nutritious and healthy to start the day. It's just that every once in a while it's good to leave aside the traditional toast with jam.
At home it is always good to have fruit, so you can take advantage of bananas, for example, because once you keep them in the refrigerator they turn black and nobody wants to eat them. It's not that they are ugly, they just turn black their peels. So when you have some, you can prepare something tasty for breakfast, like these muffins with banana and kiwi.
Both fruits are full of energy and vitamins, and if we add to that that these muffins have whole wheat flour and brown sugar, then we get very healthy muffins.
So if you want to prepare them to dazzle your family, here is the recipe.
Ingredients
- 1 cup of integral flour
- 1 cup of regular flour
- 1 cup of brown sugar, I didn't get brown so I used blonde sugar
- 3 teaspoons of baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 cup of milk
- 3 tablespoons of orange juice
- ¼ cup banana puree
- 3 tablespoons of oil
- 1 kiwi, peeled and chopped
Directions
Preheat the oven to medium temperature and prepare your muffin tins. You can put some oil or butter or paper cups on them. It should be noted that the dough sticks a little to the paper, so it would be best to make them directly in the pan.
In a bowl combine the dry ingredients: flour, sugar, baking powder, baking soda and salt.
On the other hand, beat the eggs, add the milk, orange juice, banana and oil. We had already combined the oil and the orange juice so we didn't have to put them in separate containers. Beat until the ingredients are well incorporated.
Mix the dry ingredients with the wet ones, but without beating too much. Add the kiwi, mix a little more and start filling the molds until ¾ reaches part of its capacity.
Bake for 18 to 20 minutes or until a skewer is inserted and it comes out clean. Remove them from the molds and let them cool.
Tip
The truth is that they are delicious fresh from the oven, but the next day when the fruit has already moistened the dough, they are even tastier, so we recommend that you prepare them at night to have them fresh in the morning.
