Try these crunchy Biscayan-style cod croquettes, they're ready in just minutes!

Prepare these delicious cod pancakes with Biscayan style sauce. They are easy to prepare and taste great.

The sauce is made with tomato, bell pepper and olives. It is a perfect dish for any special occasion, don't miss out on trying it.

Crunchy Biscayan-style cod croquettes


1 sweet bell pepper

4 tomatoes

1/4 cups of oil

1/4 onions

4 cloves of garlic

1/2 cups of olives

Salt, to taste

Peppers, to taste

300 grams of dried cod

1 1/2 cups of bread crumbs

2 tablespoons fresh cilantro, chopped

1 teaspoon of salt

1 teaspoon of pepper

1/2 cups of flour

2 eggs


Cut the bell pepper and remove the seeds, quarter the tomato, remove the seeds and chop both vegetables finely. Remove the skin from the garlic and lightly fry it in a pan with hot oil.

Add the finely chopped onion, the bell pepper and the tomato. Take out the garlic from the frying pan and reserve it. Pour the preparation in the blender and blend until you have a homogeneous sauce. Return the sauce to the fire and add the olives cut in slices, season with salt and pepper.

For the cakes, place the cod in a bowl and add chopped onion, finely chopped garlic, cilantro, salt and pepper.

Mix well and add 1 egg and ½ cup of bread crumbs. Form small balls and pass each one through flour, then through egg and finally through breadcrumbs. Fry the balls in hot oil, when they are golden remove them from the oil and place them on napkins to remove excess fat.

Serve a bed of the sauce on a plate and place the croquettes on top.


Place a coriander leaf in the center of the dish.

You can use fresh cod, just put it in water to remove excess salt and cook it in water, crumble it and it is ready to use.
