Sometimes, when we become vegetarians, we may think that there are dishes that we will never be able to taste and enjoy again, but the world of vegetables, greens and grains is so wide and diverse, that we can always find flavors that match and even surpass those recipes prepared with meat.
Today we share with you this spectacular recipe so that you can try some vegetarian milanesas without feeling much of a difference.
- 2 eggplants
- 1 tablespoon garlic, minced
- 3 eggs, whole
- 1/2 cups parsley, chopped
- 1/2 cups of parmesan cheese
- 3 cups of breadcrumbs
- Salt to taste
- Pepper to taste
Peel the eggplant and cut it into long slices, 1 cm each. Add salt to remove the bitterness.
In a tray with a grate, place the eggplant slices with the salt to release its juice for 20 minutes. Dry the eggplants very well with absorbent paper.
In a tray, mix the egg with the previously chopped garlic. In another tray, mix the breadcrumbs with the parmesan cheese and parsley.
To bread, pass a slice of eggplant through the egg mixture and then through the bread mixture. Make these two processes twice.
Heat the oil and fry the eggplants for 4 minutes on each side, then leave them on a plate with absorbent paper to remove the excess oil. Serve on a large plate and accompany with poblano rice.
For a healthier option, it can be prepared in the oven or in the air fryer.
