- 600 grams of small potatoes
- 4 eggs (or two eggs per person if you prepare a single dish)
- 200 grams of mushrooms
- 1 bunch of green asparagus
- 4 sweet garlic
- Black pepper
- Fine salt
- Olive oil.
Wash the potatoes well, put them in a pot with water and a pinch of salt, whole and unpeeled, and cook them until they are tender, depending on the size they will need more or less time, it is better to use small potatoes, in about 20 minutes they will be ready. Clean the asparagus and chop it. Clean the mushrooms. Peel and chop the tender garlic.
Add a large skillet to the heat with a little oil and sauté the asparagus for a few minutes and then add the mushrooms, salt and pepper to taste. Meanwhile, cool the potatoes with water, drain and chop them, put them in the pan, add more salt and pepper, add the chopped rosemary and the tender garlic, and raise the heat to sauté for a few minutes, carefully stirring with a wooden spoon or spatula.
Prepare a nonstick skillet to make the eggs on the griddle. Add a little oil and when hot pour the egg. Simmer the egg and cover the skillet so that the top is steamed and the base does not burn. Add salt to the egg.
Finally, serve as a base the sautéed potatoes with the mushrooms and asparagus, place the grilled egg on them and water with a thread of olive oil. Bon appetit!
