Mix the butter with the sugar and beat until a cream is obtained. Add the egg yolk and a thread of coconut liquor. Add the flour and salt. Mix the ingredients to obtain a homogeneous mass.

Chop the pineapple and add it together with the coconut to the dough of the cookies. Wrap the dough with plastic film and refrigerate for 1 hour.

Preheat the oven to 180°C. Unwrap the dough and cut it in slices of 1 centimeter thickness. Place the cookies on one or two oven trays lined with waxed paper.

Bake the cookies for 12-15 minutes or until they are lightly browned on the edges. Allow them to cool slightly for a few minutes on the trays before placing them on a rack.

For the icing, mix the powdered sugar in a glass with a few teaspoons of coconut liquor to form a thick cream. Glaze the cookies to your liking.
