Ingredients (for 4 people)
- 3 or 4 large mushrooms per person
- ¾ cups of cooked ham cut into cubes
- 1 ¼ cup of liquid cooking cream
- Half an onion
- Olive oil.
Clean the mushrooms well, removing all traces of soil. Separate the stems and chop them very small. In a frying pan with oil, sauté the chopped onion. When it is transparent put the chopped stems and sauté for a couple of minutes.
Add the cooked ham, add salt and pepper to taste and leave another couple of minutes. Add the cream and let it reduce and thicken the sauce on the fire. When it has a creamy consistency remove it. While you finish the sauce, put the clean and well dried mushrooms (dry with kitchen paper if necessary) in a frying pan on the fire to grill them for one minute on each side.
Remove the mushrooms from the fire, put a teaspoon of sauce on each one and serve them very hot at once, sprinkled with a little chopped parsley if you like.
Choose large and firm mushrooms and chop all the ingredients of the sauce very small, cooking is faster and improves the presentation.
You can add a teaspoon of grated cheese to the sauce to increase the creaminess and flavor.
